little updates....

Last Thursday, Josh and I went to Van's classroom to see Van's class Fall Plays. The put on three little plays and sang some Thanksgiving songs.



On Friday, Petey and I decorated the Christmas tree in our living room. We put up two trees.....our family tree in our family room and our Red, White & blue tree in our living room. ( I'll show pictures of our family tree later.) Petey's dressed up because his class went to the Victoria Theater to see Madeline's Bad Hat. Van's class went the Friday before Junie B. Jones play.



I finally made PUMPKIN BARS. They were really good. I made to pumpkin pies too. (no, pumpkin rolls yet though Tammie :) )

Ingredients
  • 4 eggs
  • 1 2/3 cups white sugar
  • 1 cup vegetable oil
  • 1 (15 ounce) can pumpkin puree
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt

  • 1 (3 ounce) package cream cheese, softened
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups sifted confectioners' sugar
Directions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix the eggs, sugar, oil, and pumpkin with an electric mixer until light and fluffy. Sift together the flour, baking powder, baking soda, cinnamon and salt. Stir into the pumpkin mixture until thoroughly combined.
  3. Spread the batter evenly into an ungreased 10x15 inch jellyroll pan. Bake for 25 to 30 minutes in preheated oven. Cool before frosting.
  4. To make the frosting, cream together the cream cheese and butter. Stir in vanilla. Add confectioners' sugar a little at a time, beating until mixture is smooth. Spread evenly on top of the cooled bars. Cut into squares.

Yummy.....

Well, I haven't posted a recipe or anything about food lately so I thought that I would share this Green Herb Dip Recipe from The BAREFOOT CONTESSA.

Green Herb Dip
makes 2 cups

8 ounces cream cheese at room temp.
1/2 cup sour cream at room temp.
1/2 cup good mayonnaise
3/4 cup chopped scallions (white & green parts)
1/4 cup chopped fresh flat leaf parsley
1 tablespoon chopped fresh dill
1 teaspoon salt
1/4 teaspoon ground black pepper

Mix everything together. serve at room temp.


***how can you resist a recipe with sour cream, cream cheese & mayonnaise ? ***

getting ready for Thanksgiving...

Thanksgiving is on it's way and I am getting as excited as my children are! I can already smell the wonderful food! WHAT'S YOUR FAVORITE THANKSGIVING FOOD?
My favorite is Pumpkin Roll......Pumpkin Pie......yes, I love the pumpkin! I also love the vegetable dishes.

Happy Birthday Liam

Happy Birthday Cousin Liam. He is One Year Old today. Here he was Saturday.............and he was when he was born. :)

Friday, Mommy made brownies for Petey to take to school and share with his class. He was a little nervous about it at first......but he got to wear a birthday hat and his class sang Happy Birthday to him and he ended up having a lot of fun!



Saturday we had Petey's Birthday Party and Petey's Cousin Liam turned one on the 11th so we had a Birthday cake for Liam too!

Gobble, Gobble and feeling shy.

Van and Petey each got to color a picture of a turkey for a coloring contest. Here are their pictures before they turned them in. (Van's has his name on it).


In Petey's class the teacher makes lots of books about the kids. Then they bring them home and we read them together. This book was on feelings. Each child picked a feeling and they had to say when they felt that way......Petey's was shy. (I didn't even know that Petey felt shy..lol...) :)

I missed a post!


Well, I missed a post yesterday. It was Petey's birthday & birthday party! I will try to continue to post everyday though! (you can't let one little post get you down)
