Tonight starts the first Ohio State game of the season, so I thought I would repost a buckeye recipe.
If you haven't tried them , you should....they are really good!
Buckeyes
1 1/2 cups peanut butter
1 cup of butter, softened
1/2 teaspoon vanilla extract
6 cups confectioners sugar
4 cups semisweet chocolate chips
In a large bowl mix together peanut butter, butter, vanilla and confectioners sugar.
Roll into 1 inch balls.
Place balls on a wax paper lined cookie sheet.
Place a tooth pick on the top of each ball.
Chill in the freezer until firm.
Usually around 30 min.
Melt chocolate chips in a double boiler or in a bowl set over a pan of barley simmering water.
Stir until smooth.
Dip frozen peanut butter balls in chocolate ( holding onto the tooth pick).
leave a small portion of the peanut butter at the top so the look like buckeyes.
Refrigerate until serving.

My step-dad is a Buckeye...and the rest of us are Gator! I'm not an OH fan, but I do love to eat them!
